This top white dry wine is 100% Assyrtiko, sourced from autochthonous, non-irrigated vines in the selected vineyards of Pyrgos and Megalochori (Protected Designation of Origin Santorini). Its uniqueness lies in the winemaking: the wine is fermented with indigenous yeasts and matured on its noble lees for 12 months in stainless steel tanks, while it is bottled unfiltered. The result is a purebred, shockingly dense expression of the Santorini terroir.
